One Pan Meal: Salmon with Roasted Potatoes and Carrots

How to make salmon and potatoes in just one pan

On some nights, it’s stressful enough to have to throw together a meal – nevermind having to wash the dishes and clean up afterwards. Ain’t nobody got time for that! In ONE baking pan, I prepared potatoes, carrots and salmon. In one hour dinner was served, and all I had to clean afterwards was the pan, a mixing bowl and my cutting board. BOOM.

Start off by quartering your baby potatoes. Skin carrots, cut lengthwise and then across into 3-inch pieces. Throw everything into a mixing bowl.

The salmon will be ready in about 15 minutes, but make sure to check with your fork. Ingredientz
  • Skinless salmon fillet
  • Roasting potatoes, quartered
  • Carrots, cut lengthwise, then quartered
  • Lemon zest
  • Olive Oil
  • Salt and pepper
  • Any other seasonings
  • Dijon mustard
  • Grainy mustard
Instructionz
  1. Preheat oven to 400F
  2. Line baking sheet with foil
  3. Quartering baby potatoes
  4. Skin carrots, cut lengthwise and then across into 3-inch pieces.
  5. Put everything into a mixing bowl and add olive oil, lemon zest, salt, pepper and seasonings. Mix.
  6. Spread evenly onto baking dish and put in oven
  7. Meanwhile, wash salmon and pat dry
  8. Mix together mustards and spread Morgan Burnett Youth Jersey along salmon
  9. Let sit for 30 minutes, until potatoes and carrots are ready
  10. Remove baking dish and lower temperature to 350F
  11. Cut salmon into edible pieces (though you can just keep it whole) and place in 'nooks' created between potatoes
  12. Place back in the oven for about 15-20 minutes, until salmon is ready
