Lime-Spiked Grilled Chicken Skewers

Summer might be over, but that doesn’t mean there aren’t some good grilling Reggie White Authentic Jersey weather days left! The chicken for these skewers can be marinated for up to eight hours and once cooked, will last about three days. Since I also add peppers, leftovers (which you know I’m all about) already have veggies to go along with the chicken. Okay, let’s get into it:

Recipe for Lime-Spiked Grilled Chicken Skewers

Start out but dicing up the peppers and chicken breasts into somewhat equal pieces. For chicken breasts, I cut them in half and then I cut them across about 4-5 times.

Lime-Spiked Grilled Chicken Skewers

  • 3 Chicken breasts, cubed
  • 3 Bell peppers, cubed
  • Juice of one lime for every piece of chicken breast (3 chicken fillets = 3 limes)
  • 2 tablespoons olive oil
  • ¼ cup red wine vinegar
  • 3 teaspoons paprika
  • 2 teaspoons cayenne pepper
  • 1 teaspoon chili powder
  • If you see your chicken is too dry, add more olive oil as needed
  1. Combine all ingredients in tupperware and mix well
  2. Move to fridge for at least 2 hours
  3. Remove and mix again before skewering (if using wooden skewers, soak in water for 20 minutes first)
  4. Grill on on indirect heat for 10-15 minutes, or until cooked
