Easy Chicken Meatballs

If I’m cooking something that freezes well, I’ll make more than enough to do just that. These chicken meatballs usually call for one pound of ground chicken, but I used two so that there were more than enough to Ziploc and use in the future. If you’re planning on using just one pound of the chicken, use only two eggs.

IMG_2401 Start off by breaking the eggs and whisking them lightly. Dice the red peppers into small 1/2-inch pieces, add Solomon Thomas Jersey spices, and cheese. Now you’re ready to add the chicken. IMG_2402 Fold the chicken in with the rest of the ingredients. If the mixture is too loose to make balls out of, add more breadcrumbs. This actually happened to me the first time I made these. IMG_2404 IMG_2405 Once you have a good consistency that you feel comfortable working with, start creating even sized balls, moving them to a foil-lined baking sheet as you go along. IMG_2406 IMG_2407 Place into a 375 degree preheated oven and cook for 25 minutes before removing pan and turning the balls over. You’ll see they get browned on the bottom.  IMG_2410 IMG_2411 Cook for another 10, then turn off the stove and let them sit until cool. Note: You know your stove better than I do, so adjust time as you see fit. Cutting through (or even tasting!) will help you decide if they’re ready. Cooking is not always about following a recipe, but about following your inner home cook.   • 2 pounds ground chicken
  • ½ cup Parmesan cheese
  • 2 cups breadcrumbs
  • 2 cups diced roasted red peppers
  • 4 garlic cloves, minced
  • 1 TBSP red pepper flakes
  • 1 TBSP garlic powder
  • 2 TBSP all purpose seasoning
  • 4 eggs (use 2 if making 1 pound of chicken)
Note
  • You can really use whatever spices you love!
