How to make cornmeal-crusted eggplant

Eggplant  is one of those versatile foods that can end up being a main meal or being part of a main meal. You can definitely take this recipe one step further and add some tomato sauce or LaDarius Gunter Authentic Jersey pesto and top with mozzarella if you’d like. I kept these as a side item. They last pretty well up to two days after you make it and can be heated up in a toaster oven, regular oven, or a (very) short amount of time in the microwave (this will take away the crisp-factor, however).

The prep

Slice an eggplant into about 1-inch thick parts. Sprinkle with salt on top of the cutting board and let it sit for about 20 minutes. In the meantime, preheat the oven to 375 degrees and line a baking sheet with parchment paper. You might need two, depending on how big your eggplant is.

In a bowl, mix cornmeal, paprika, salt and pepper. Take brown rice flour and put into a separate container. Finally, your milk goes into a third container.

  • ½ cup brown rice flour (or any flour that works for you)
